Why sober up?
If wine is compared to a sleeping soul, then sobering is a process of awakening the soul. Although it sounds like metaphysics, sobering up has real chemical principles!
To put it simply, sobering has two purposes. The first purpose is to make the wine fully contact with the air and undergo oxidation reaction with oxygen. In this process, the wine can disperse the bad taste, fully open the aroma, and make the tannins change. Be supple.
Pour the wine into the decanter
The wine has very little contact with oxygen during the placing process after bottling, and the sulfide ions in the sulfur dioxide added to the bottle for anticorrosion will also make the wine in a reduced state, so when it is just opened, there may be a momentary The smell of rotten eggs, lighted matches, or rotten cabbage are all caused by the sulfur compounds in the wine, but as long as the wine is exposed to oxygen after opening the bottle, the wine will switch to an oxidized state, and the turbidity in the wine will also be very fast Disappeared, showing the scent of storage.

In addition, contact with oxygen has another benefit. We all know that wines of excellent quality need to be aged for ten to twenty years, or even thirty to fifty years, before they are tasted, such as "Lafite 1982"! So what happened during the aging process? Over the course of several decades, oxygen will slowly penetrate the gaps of the oak cork, enter the wine desperately, and undergo a slow oxidation reaction with the compounds inside, the aroma will become complex, and the tannins will become soft and palatable. However, human beings are impatient, and they can’t wait that long. The good wine is opened before adulthood. At this time, it can only be sobered to make the wine and oxygen come into contact with a large area quickly, barely showing this bottle of wine. Brilliant after decades!
The second purpose is to remove wine residue, which is generally only found in aged wines and unfiltered wines, so it is relatively rare for everyone. After the wine has been aged for a long time, tartaric acid crystals will precipitate, and tannins and pigments will combine to form flocs. This situation does not affect the quality of the wine, but the entrance will affect the taste experience, so the wine residue will be removed during the sobering process.

In fact, there are only two types: one is young red wine that needs to be aged but is drunk in advance and has not reached the maturity period, and the second type is old wine that may have dregs in the wine after a long time of adulthood.
